🍗 Rustic Piccata with Chicken and Tomatoes

Ingredients
- 400 g Chicken breast fillet
- 50 g Flour (all-purpose)
- 30 g Butter
- 150 ml Chicken broth
- 2 EL Lemon (juice)
- 200 g Cherry tomatoes
- 1 Prise Salt
- 1 Prise Pepper
- 10 g Basil (fresh)
Instructions
- 1. Wash the chicken and cut it into equal slices (approx. 1 cm thick). Season with salt and pepper.
- 2. Lightly coat the chicken slices in flour and shake off excess flour.
- 3. Melt the butter in a large frying pan over medium heat.
- 4. Fry the chicken slices for approx. 3-4 minutes per side until golden brown. Remove from the pan and place on a plate.
- 5. Add the halved cherry tomatoes to the same pan and fry them for 2 minutes until soft.
- 6. Pour the chicken broth and lemon juice into the pan. Bring the sauce to a boil and reduce it slightly (approx. 2 minutes).
- 7. Return the chicken slices to the pan and toss them in the sauce. Sprinkle with fresh basil and serve.
