🍲 Pho with Tofu and Vegetables

Ingredients
- 150g firm tofu
- 1L vegetable broth
- 150g rice noodles
- 100g cabbage
- 100g carrots
- 2 scallions
Instructions
- 1. Cube the tofu and sauté in a pan.
- 2. Heat the vegetable broth.
- 3. Add cabbage and carrots and simmer for 10 minutes.
- 4. Cook rice noodles according to package instructions.
- 5. Place noodles in bowls, pour broth and tofu over.
- 6. Garnish with scallions.
