  1. 1. Halve the onion and ginger and roast until lightly browned.
  2. 2. Heat broth in a large pot, add beef, cinnamon, star anise, onion, and ginger.
  3. 3. Let simmer on low heat for 20 minutes until the meat is tender.
  4. 4. Cook rice noodles according to package instructions and drain.
  5. 5. Take meat out of the broth, slice thinly, and return to the broth.
  6. 6. Serve in bowls: rice noodles, broth with meat, fresh herbs, lime juice, and chili.
