🥔 Broken Patatas Bravas with Garlic Yoghurt

Ingredients
- 800 g Potatoes (waxy)
- 60 ml Cooking oil
- 20 g Sweet paprika paste
- 15 g Tomato paste
- 2 g Ground chili powder
- 3 Stück Garlic cloves
- 150 g Yoghurt (3.5% fat)
- 10 g Salt
- 5 g Cane sugar
Instructions
- 1. Peel the potatoes and cut them into coarse, irregular cubes (approx. 3 cm). This creates the typical 'broken' texture.
- 2. Fry the potato cubes in a large pot with the oil over medium heat for 15 minutes until golden brown and tender. Remove them and keep warm.
- 3. Mince the garlic finely and mix it in a small bowl with the yoghurt, 1 tsp salt, and 1 tbsp water. Chill the sauce.
- 4. Pour almost all the excess oil out of the pot. Leave only 1 tbsp of oil behind.
- 5. Stir in the paprika paste, tomato paste, chili, and sugar into the remaining hot oil. Fry the ingredients for 1 minute while stirring until fragrant.
- 6. Pour 250 ml of hot water in. Let the sauce simmer for 2 minutes until it thickens slightly. Season with salt.
- 7. Return the fried potatoes to the sauce and toss them gently until they are fully coated.
- 8. Serve the Bravas immediately on plates with a dollop of garlic yoghurt sauce.
