  1. 1. Peel the potatoes and cut them into small, bite-sized cubes of approx. 2 cm.
  2. 2. Heat 2 tbsp of olive oil in a large pan and fry the potato cubes until golden brown and crispy over medium heat. This takes approx. 15 minutes. Remove the potatoes from the pan and place them on kitchen paper.
  3. 3. Finely chop the onion and garlic.
  4. 4. Sauté the onion in the remaining olive oil in the same pan until soft. Add the garlic for 1 minute until fragrant.
  5. 5. Stir in the paprika and chili flakes and let them toast for 30 seconds without burning.
  6. 6. Pour in the passata and let the sauce simmer for 5 minutes until it thickens slightly. Season with salt. Remove the pan from the heat.
  7. 7. Mix the mayonnaise with the lemon juice and a pinch of salt to make a sauce.
  8. 8. Serve the fried potatoes with the red tomato sauce and the white garlic mayonnaise separately or drizzled on top.
