🥔 Patatas Bravas with Garlic-Yogurt Crema

Ingredients
- 600 g Potatoes (waxy)
- 50 ml Olive oil
- 2 g Garlic cloves
- 150 g Plain yogurt (full fat)
- 20 g Tomato paste
- 10 g Flat paprika flakes
- 2 g Sugar
- 5 g Salt (fine)
Instructions
- 1. Wash the potatoes and cut them into cubes of approx. 2 cm.
- 2. Toss the potato cubes in a bowl with 40 ml olive oil, salt, and half of the garlic cloves (chopped).
- 3. Preheat the oven to 200 degrees Celsius (top/bottom heat). Spread the potatoes on a baking sheet lined with parchment paper.
- 4. Bake the potatoes for 25 minutes until crispy.
- 5. Meanwhile, mix the yogurt with the remaining raw garlic (finely pressed), 1 tbsp olive oil, and a pinch of salt in a small bowl.
- 6. For the bravas sauce, heat 1 tsp olive oil in a small pan. Stir in the tomato paste, paprika flakes, and sugar and sauté briefly without burning.
- 7. Place the cooked potatoes on plates, drizzle with the tomato-paprika sauce, and add dollops of the garlic-yogurt.
