🥔 Crispy Patatas Bravas Bowl

Ingredients
- 800 g Potatoes (waxy)
- 40 ml Olive oil
- 20 g Tomato paste
- 5 g Sweet paprika powder
- 2 g Chili powder
- 10 g Garlic (pressed)
- 100 g Yogurt (plain, 2% fat)
- 5 ml Lemon juice
- 100 g Red pepper (diced)
- 10 g Salt
Instructions
- 1. Preheat oven to 200°C. Peel potatoes and cut into approx. 2 cm cubes.
- 2. Toss potato cubes in a bowl with 30 ml olive oil, salt, and paprika powder until well coated.
- 3. Spread potatoes on a baking tray in a single layer and bake for 25 minutes until golden brown and crispy.
- 4. Meanwhile, sauté garlic and red pepper in a pot with the remaining 10 ml oil over medium heat for 2 minutes.
- 5. Add tomato paste, chili powder, and 100 ml water and simmer for 3 minutes until the sauce thickens.
- 6. Mix yogurt with lemon juice and a pinch of salt to create the white sauce.
- 7. Serve hot potato cubes on plates, drizzle with both red and white sauces, and serve immediately.
