🥗 Cold Pasta and Bean Salad with Lemon and Thyme

Ingredients
- 400 g Courgette ribbons (zucchini spirals)
- 200 g Chickpeas (from a can)
- 1 Stk Lemon
- 5 g Fresh thyme
- 200 g Cherry tomatoes
- 30 ml Extra virgin olive oil
- 3 g Salt
- 1 g Black pepper
- 20 g Grated Parmesan
Instructions
- 1. Rinse the chickpeas and dry them.
- 2. Wash the zucchini and cut it into long, thin strips using a peeler.
- 3. Halve the cherry tomatoes.
- 4. Strip the leaves from the thyme sprig and chop them finely.
- 5. Squeeze the juice of the lemon.
- 6. In a large bowl, mix the zucchini strips, chickpeas, tomatoes, and thyme.
- 7. Add the lemon juice and olive oil.
- 8. Season with salt and black pepper.
- 9. Gently toss the salad so the zucchini does not break.
- 10. Top with grated Parmesan and serve cold.
