  2. 2. Wash the zucchini and cut it into long, thin strips using a peeler.
  3. 3. Halve the cherry tomatoes.
  4. 4. Strip the leaves from the thyme sprig and chop them finely.
  5. 5. Squeeze the juice of the lemon.
  6. 6. In a large bowl, mix the zucchini strips, chickpeas, tomatoes, and thyme.
  7. 7. Add the lemon juice and olive oil.
  8. 8. Season with salt and black pepper.
  9. 9. Gently toss the salad so the zucchini does not break.
  10. 10. Top with grated Parmesan and serve cold.
