🎃 Pasta alla Zucca e Salvia

Ingredients
- 320 g Spaghetti
- 500 g Pumpkin (e.g. Hokkaido)
- 1 Stück Onion
- 2 Stück Garlic clove
- 30 ml Olive oil
- 12 Blätter Fresh sage
- 40 g Parmesan cheese
- nach Bedarf Salt and pepper
Instructions
- 1. Wash the pumpkin, remove the seeds, and cut the flesh into approx. 2 cm cubes.
- 2. Finely chop the onion and mince the garlic. Heat the olive oil in a large pan.
- 3. Fry the onion and pumpkin in the pan for 10 minutes until the pumpkin is tender.
- 4. Add the garlic and sage leaves and fry everything for 2 minutes until the sage is crispy.
- 5. Cook the spaghetti in salted water until al dente. Reserve a mug of pasta water.
- 6. Add the drained pasta to the pan with the pumpkin. Add a little pasta water and mix everything thoroughly with the tongs.
- 7. Remove the pan from the heat. Stir in the grated Parmesan and serve the dish immediately.
