  1. 1. Wash the pumpkin, remove the seeds, and cut the flesh into approx. 2 cm cubes.
  2. 2. Finely chop the onion and mince the garlic. Heat the olive oil in a large pan.
  3. 3. Fry the onion and pumpkin in the pan for 10 minutes until the pumpkin is tender.
  4. 4. Add the garlic and sage leaves and fry everything for 2 minutes until the sage is crispy.
  5. 5. Cook the spaghetti in salted water until al dente. Reserve a mug of pasta water.
  6. 6. Add the drained pasta to the pan with the pumpkin. Add a little pasta water and mix everything thoroughly with the tongs.
  7. 7. Remove the pan from the heat. Stir in the grated Parmesan and serve the dish immediately.
