🍝 Puglia Pasta with Smoked Bacon and Raisins

Ingredients
- 400 g Penne Rigate
- 150 g smoked bacon, diced
- 2 Stk onions, finely diced
- 50 g raisins
- 2 EL cider vinegar
- 40 g parmesan, grated
- nach Bedarf salt and pepper
Instructions
- 1. Bring a large pot of water to a boil with plenty of salt.
- 2. Fry the bacon in a large skillet without fat over medium heat until crispy.
- 3. Add the onions to the skillet and sauté until translucent, about 3 minutes.
- 4. Stir the raisins into the bacon and deglaze the pan with the vinegar.
- 5. Cook the penne al dente according to packet instructions.
- 6. Combine the drained pasta with the bacon and onion mixture.
- 7. Season with salt and pepper and serve sprinkled with parmesan.
