  1. 1. Bring a large pot of salted water to a boil. Cook the penne pasta al dente. Reserve 150 ml of pasta water.
  2. 2. Add the mint, roasted walnuts, garlic, chili, and olive oil to a blender. Puree until a coarse paste forms.
  3. 3. Toss the drained pasta with the mint-walnut paste in a large bowl. Add the lemon juice and gradually the pasta water until the sauce is creamy. Season with salt.
  4. 4. Crumble some more roasted walnuts as a topping over the pasta. Serve immediately.
