🌿 Penne alla Menta and Walnuts

Ingredients
- 400 g Penne pasta
- 50 g Fresh mint leaves
- 80 g Roasted walnuts
- 1 Stk Garlic clove
- 4 EL Olive oil
- 1 EL Lemon juice
- 1/2 TL Chili flakes
- 1 TL Salt
Instructions
- 1. Bring a large pot of salted water to a boil. Cook the penne pasta al dente. Reserve 150 ml of pasta water.
- 2. Add the mint, roasted walnuts, garlic, chili, and olive oil to a blender. Puree until a coarse paste forms.
- 3. Toss the drained pasta with the mint-walnut paste in a large bowl. Add the lemon juice and gradually the pasta water until the sauce is creamy. Season with salt.
- 4. Crumble some more roasted walnuts as a topping over the pasta. Serve immediately.
