🍲 Parisian Vegetable Stew with Sun-Dried Tomatoes

Ingredients
- 2 Stück Parsnips
- 300 g Pumpkin (Kabocha or Hokkaido)
- 1 Stück Onions
- 2 Stück Garlic cloves
- 50 g Sun-dried tomatoes
- 750 ml Chicken or vegetable broth
- 4 Zweige Thyme (fresh)
- 1 EL Butter
- 50 ml Cream
- 1 TL Salt
Instructions
- 1. Wash, peel, and cube the parsnips, pumpkin, and onions into equal-sized pieces.
- 2. Slice the sun-dried tomatoes into fine strips.
- 3. Melt the butter in a large pot and sauté the onions, parsnips, and pumpkin for 5 minutes.
- 4. Add the garlic and tomato strips and cook for another 1 minute.
- 5. Pour in the broth and add the thyme sprigs.
- 6. Simmer the stew for 20 minutes over medium heat until the vegetables are very soft.
- 7. Remove the thyme sprigs and partially puree the soup with a hand blender.
- 8. Stir in the cream, season with salt and pepper, and serve hot.
