  1. 1. Wash, peel, and cube the parsnips, pumpkin, and onions into equal-sized pieces.
  2. 2. Slice the sun-dried tomatoes into fine strips.
  3. 3. Melt the butter in a large pot and sauté the onions, parsnips, and pumpkin for 5 minutes.
  4. 4. Add the garlic and tomato strips and cook for another 1 minute.
  5. 5. Pour in the broth and add the thyme sprigs.
  6. 6. Simmer the stew for 20 minutes over medium heat until the vegetables are very soft.
  7. 7. Remove the thyme sprigs and partially puree the soup with a hand blender.
  8. 8. Stir in the cream, season with salt and pepper, and serve hot.
