1. In a bowl, mix eggs, salt, milk, and flour with a whisk until you have a homogeneous batter. If needed, add 1–2 tbsp water. Let the batter rest for a short time.
2. In the meantime, take the salmon out of the fridge so it reaches room temperature. Wash the lemon, halve it, and squeeze out the juice. Wash the arugula and dry it thoroughly.
3. Heat 1 tbsp oil in a pan over medium heat, then evenly distribute one ladle of batter in the pan and bake for about 1–2 minutes on both sides until golden brown. Add extra oil if needed.
4. Top the finished pancakes with salmon and arugula, drizzle with some lemon juice. Season with salt and pepper, roll up if you like, and serve cut diagonally. Enjoy your meal!
