1. Whisk the eggs, milk, flour, and sugar into a smooth, thick batter and let it rest for about 20 minutes.
2. Dice the melon. Peel the grapefruit thoroughly and cut out the segments. Collect the juice and squeeze the juice from the remaining pulp into it. Mix the juice with the yogurt and 2 tablespoons of sugar.
3. Heat some butter in a pan for frying. Pour in a ladle of batter and fry for 1-2 minutes until golden brown. Flip and fry for another 1-2 minutes. Fry 4 pancakes this way and keep them warm in the oven (at 80°C) as needed until all are done.
4. Place the pancakes on plates, fill them with the fruit, and fold them into quarters. Caramelize the remaining sugar in the pan and drizzle it in thin strands over the pancakes. Serve garnished with the yogurt.
