  1. 1. Wash and pat the chicken breast dry. Cut it horizontally into two thin cutlets.
  2. 2. Mix flour, salt, and pepper on a plate. Coat the cutlets lightly in the flour mixture.
  3. 3. Heat the olive oil in a large non-stick pan over high heat. Fry the cutlets for 3 minutes per side until golden brown.
  4. 4. Remove the chicken from the pan and place it on a plate. Add the butter to the remaining juices in the pan.
  5. 5. Stir in the melting butter. Whisk in the chicken broth and lemon juice.
  6. 6. Let the sauce simmer for 2 minutes until slightly thickened. Pour the sauce over the chicken breast and serve immediately.
