  1. 1. Slice the ciabatta loaves into thick slices and toast them in an oven at 200 degrees for 5 minutes until golden brown.
  2. 2. Wash the tomatoes, dry them, and grate the peeled tomatoes (if you remove the skin) or whole tomatoes with a grater over the toasted bread surface. Discard the tomato water.
  3. 3. Season the tomato layer with a good splash of olive oil and a pinch of sea salt.
  4. 4. Crumble the goat cheese over the tomatoes and break it up slightly with your fingers.
  5. 5. Wash the rosemary sprigs, dry them, and finely sprinkle the needles over the toasts. Serve the breakfast immediately while warm.
