  1. 1. Wash the spinach thoroughly and blanch it in boiling water for 2 minutes. Drain and place in ice water.
  2. 2. Chop the onion, tomato, ginger, and garlic roughly.
  3. 3. Heat oil in a pan and add onion and spices (cumin and garam masala). Sauté for 3-4 minutes until the onion is soft.
  4. 4. Add the chopped tomatoes, ginger, and garlic, and cook for 5 minutes until the tomatoes are soft.
  5. 5. Add the blanched spinach and mix well. Cook for 3 minutes.
  6. 6. Puree the mixture until smooth. Cut the paneer into cubes and add it to the sauce.
  7. 7. Simmer the mixture on low heat for 5 minutes and season with salt to taste. Serve.
