  1. 1. Cut the chicken breast into bite-sized cubes. Season them with a little salt and pepper.
  2. 2. Dice the onion and bell pepper finely. Crush the garlic finely.
  3. 3. Cut the ciabatta slices into cubes. Fry them in a pan with a little oil until golden brown and sprinkle lightly with salt.
  4. 4. Heat the olive oil in a large pan or paella pan. Fry the chicken over high heat until brown. Remove it and set aside.
  5. 5. Sweat the onions in the same fat until translucent. Add the garlic and pepper cubes. Cook for 3 minutes.
  6. 6. Stir in the tomato paste and smoked paprika. Cook the spices for 1 minute until fragrant.
  7. 7. Pour the rice into the pan and stir briefly so that it combines with the oil and spices.
  8. 8. Pour the hot vegetable broth over the rice. Bring everything to a boil. Reduce the heat to low.
  9. 9. Place the fried chicken and pepper pieces evenly on the rice. Cook the rice open, without stirring.
  10. 10. Remove the pan from the stove. Place the toasted bread cubes decoratively on the rice. Cover the pan with foil and let it rest for 5 minutes.
