  1. 1. Heat the olive oil in a large pan or paella pan over medium heat.
  2. 2. Dice the bell peppers and cabbage roughly. Halve the cherry tomatoes.
  3. 3. Sauté the vegetables with the garlic (mashed) for 5 minutes until soft.
  4. 4. Stir in the rice and paprika powder and toast for 2 minutes.
  5. 5. Deglaze with the vegetable broth. Add the saffron and salt.
  6. 6. Simmer the dish for 15 minutes over medium heat without stirring.
  7. 7. Remove the pan from the heat. Cover it and let it rest for 5 minutes.
  8. 8. Serve the rice with the lemon wedges.
