🍲 Quick Vegetarian Paella with Peppers

Ingredients
- 320 g Paella rice (or short-grain rice)
- 800 ml Vegetable broth
- 2 Stück Yellow bell pepper
- 200 g Cabbage (or Savoy cabbage)
- 200 g Cherry tomatoes
- 3 Stück Garlic cloves
- 2 EL Paprika powder (sweet)
- 1 Prise Saffron threads
- 4 EL Olive oil
- 1 TL Salt
- 4 Stück Lemon wedges
Instructions
- 1. Heat the olive oil in a large pan or paella pan over medium heat.
- 2. Dice the bell peppers and cabbage roughly. Halve the cherry tomatoes.
- 3. Sauté the vegetables with the garlic (mashed) for 5 minutes until soft.
- 4. Stir in the rice and paprika powder and toast for 2 minutes.
- 5. Deglaze with the vegetable broth. Add the saffron and salt.
- 6. Simmer the dish for 15 minutes over medium heat without stirring.
- 7. Remove the pan from the heat. Cover it and let it rest for 5 minutes.
- 8. Serve the rice with the lemon wedges.
