🍲 Vienna Paella with Sausage and Peppers

Ingredients
- 300 g Long-grain rice
- 400 g Boiled sausages (approx. 4 pieces)
- 200 g Bell peppers (red and yellow)
- 1 Stück Onion
- 2 Stück Garlic cloves
- 2 EL Tomato paste
- 1 TL Paprika powder (sweet)
- 800 ml Beef broth
- 3 EL Olive oil
- 1 TL Salt
- 1 Bund Parsley
Instructions
- 1. Rinse the rice in a sieve under cold water until the water runs clear. Cut the sausages into 2 cm thick slices. Dice the peppers and onion. Crush the garlic.
- 2. Heat the olive oil in a large pan or paella pan over medium heat. Fry the sausage slices until golden brown and remove them. Place them on a plate.
- 3. Add the onions and peppers to the same fat. Sauté them for 5 minutes until soft. Add the garlic, tomato paste, and paprika powder. Stir for 1 minute until fragrant.
- 4. Add the rice to the pan. Stir until every grain is coated with the vegetable and oil mixture. Deglaze the rice with the hot beef broth.
- 5. Season the broth with salt. Place the fried sausages and all juices from the plate on top of the rice. Cook everything over low heat for 15 minutes without stirring.
- 6. Remove the pan from the heat. Cover with aluminum foil or a lid and let the rice rest for 10 minutes. This is crucial for the texture.
- 7. Chop the parsley roughly. Sprinkle it over the paella. Serve the dish warm directly from the pan.
