  1. 1. Rinse the rice in a sieve under cold water until the water runs clear. Cut the sausages into 2 cm thick slices. Dice the peppers and onion. Crush the garlic.
  2. 2. Heat the olive oil in a large pan or paella pan over medium heat. Fry the sausage slices until golden brown and remove them. Place them on a plate.
  3. 3. Add the onions and peppers to the same fat. Sauté them for 5 minutes until soft. Add the garlic, tomato paste, and paprika powder. Stir for 1 minute until fragrant.
  4. 4. Add the rice to the pan. Stir until every grain is coated with the vegetable and oil mixture. Deglaze the rice with the hot beef broth.
  5. 5. Season the broth with salt. Place the fried sausages and all juices from the plate on top of the rice. Cook everything over low heat for 15 minutes without stirring.
  6. 6. Remove the pan from the heat. Cover with aluminum foil or a lid and let the rice rest for 10 minutes. This is crucial for the texture.
  7. 7. Chop the parsley roughly. Sprinkle it over the paella. Serve the dish warm directly from the pan.
