  1. 1. Cook rice noodles according to package instructions and drain.
  2. 2. Fry shrimp in a pan with some oil until they turn pink.
  3. 3. Add garlic and spring onions and sauté briefly.
  4. 4. Crack eggs into the pan and stir-fry until set.
  5. 5. Add cooked noodles, soy sauce, fish sauce, sugar, and lime juice. Mix well.
  6. 6. Garnish with chopped peanuts and coriander and serve.
