🍑 Oven Peaches with Honey Mascarpone

Ingredients
- 4 Stk Peaches
- 20 ml Honey
- 200 g Mascarpone cheese
- 1 TL Vanilla extract
- 5 ml Lemon juice
- 4 Stk Mint leaves
Instructions
- 1. Preheat the oven to 200 °C using top and bottom heat. This takes about 5 minutes.
- 2. Wash the 4 peaches under running water. Then pat them dry with a kitchen towel.
- 3. Cut the peaches in half lengthwise. Gently twist the halves in opposite directions.
- 4. Remove the pits from the peach halves. Use a spoon to scrape out the cavities cleanly.
- 5. Place the peach halves cut-side up in a baking dish. Make sure they stand stably.
- 6. Stir the 20 ml honey with the 5 ml lemon juice in a small bowl. The juice prevents crystallization.
- 7. Put 1 teaspoon of the honey-lemon mixture into each peach cavity. Spread the remaining mixture evenly.
- 8. Slide the baking dish into the preheated oven. Bake the peaches for about 15 minutes at 200 °C, until they are soft.
- 9. In a separate bowl, stir the 200 g mascarpone with 1 teaspoon of vanilla extract. Stir until smooth.
- 10. Carefully remove the baking dish from the oven. Place it on a heat-resistant surface.
- 11. Spoon a large spoonful of the mascarpone cream into each warm peach half. Spread it evenly.
- 12. Wash the 4 mint leaves and tear them roughly. Garnish the portions with them and serve warm.
