1 Dorade (approx. 1 - 1.2 kg, ready for the kitchen)
500 g potatoes
2 tbsp parsley (finely chopped)
50 g Parmesan (freshly grated)
3 garlic cloves
10 tbsp olive oil
salt
pepper (from the mill)
Instructions
1. Peel the potatoes and slice them thinly. Boil them for about 5 minutes in boiling salted water (this is called blanching). Then remove them from the water and let them drain well.
2. Mix the parsley with about 8 tablespoons of oil in a small bowl.
3. Place half of the potato slices in a baking dish that you have greased with the remaining oil. Season with salt and pepper, drizzle with some parsley oil, and sprinkle half of the cheese over them.
4. Place the fish on top of the potato layer. Season with salt and pepper and drizzle with some parsley oil. Arrange the remaining potato slices on top, season again with salt and pepper, drizzle with the remaining oil, and sprinkle the rest of the cheese on top.
5. Place the dish in a preheated oven at 220 degrees and bake the dish for about 25 minutes.
