  1. 1. Preheat the oven to 200 degrees Celsius conventional heat.
  2. 2. Finely chop the onion and garlic, and slice the mushrooms.
  3. 3. Heat the olive oil in an oven-safe pan and fry the bacon cubes for 2 minutes until crispy.
  4. 4. Add the onions and mushrooms and fry for 5 minutes until soft.
  5. 5. Remove the pan from the heat and add the white wine and chicken broth. Let them reduce for 1 minute.
  6. 6. Place the chicken thighs skin-side up in the pan and add the cream and sage leaves.
  7. 7. Put the pan in the oven and bake the chicken for 25 minutes until the skin is golden brown.
  8. 8. Remove the pan from the oven, season the sauce briefly with salt and pepper, and serve the chicken directly in the pan.
