  1. 1. Whisk the eggs in a bowl with the milk, salt, and pepper until a homogeneous liquid is formed.
  2. 2. Melt the butter in a non-stick pan over medium heat. Do not forget to swirl the pan so that an even layer of butter is formed.
  3. 3. Pour the egg mixture into the pan. Wait about 20 seconds until the edges begin to set.
  4. 4. Take the pan off the heat and shake it vigorously back and forth. The eggs should remain creamy and slightly liquid inside.
  5. 5. Scatter the chives and tarragon on one half of the omelette. Fold the other half over.
  6. 6. Skillfully invert the omelette onto a warm plate and serve immediately. It should be golden brown and supple.
