  1. 1. Soak the gelatine leaves in cold water.
  2. 2. Whip the cream until stiff and set aside for later.
  3. 3. Gently warm the orange juice with the sugar and zest, but do not let it boil.
  4. 4. Squeeze the gelatine dry and stir it into the warm juice until dissolved.
  5. 5. Let the juice mixture cool slightly, then fold in the whipped cream.
  6. 6. Fill the cream into 4 small cups and place orange segments on top of each portion.
  7. 7. Place the cups in the refrigerator for at least 2 hours until the cream is firm.
