🍗 Light Chicken Stew in Wine Style with Mushrooms

Ingredients
- 800 g Chicken breast fillet
- 300 g Mushrooms
- 200 g Carrots
- 150 g Bacon cubes
- 200 ml White wine
- 500 ml Chicken broth
- 20 g Tomato paste
- 4 Zweige Thyme
- 20 ml Olive oil
- 5 g Salt
- 2 g Pepper
Instructions
- 1. Wash the chicken fillet and cut it into bite-sized cubes. Wash the mushrooms and halve them. Peel the carrots and slice them.
- 2. Heat the olive oil in a large pot. Fry the bacon cubes until crispy and remove them from the pot.
- 3. Fry the chicken cubes in the same pot until golden brown. Remove them and set aside.
- 4. Sauté the carrots and mushrooms in the pot for 5 minutes.
- 5. Stir in the tomato paste and fry it for 1 minute to intensify the color.
- 6. Deglaze with the white wine and let it evaporate for 2 minutes.
- 7. Return the chicken and bacon cubes to the pot. Add the chicken broth and thyme. Bring it to a boil.
- 8. Reduce the heat and let the stew simmer covered for 20 minutes until the chicken is cooked through.
- 9. Remove the thyme. Season the stew with salt and pepper. Serve hot.
