  1. 1. Wash the chicken fillet and cut it into bite-sized cubes. Wash the mushrooms and halve them. Peel the carrots and slice them.
  2. 2. Heat the olive oil in a large pot. Fry the bacon cubes until crispy and remove them from the pot.
  3. 3. Fry the chicken cubes in the same pot until golden brown. Remove them and set aside.
  4. 4. Sauté the carrots and mushrooms in the pot for 5 minutes.
  5. 5. Stir in the tomato paste and fry it for 1 minute to intensify the color.
  6. 6. Deglaze with the white wine and let it evaporate for 2 minutes.
  7. 7. Return the chicken and bacon cubes to the pot. Add the chicken broth and thyme. Bring it to a boil.
  8. 8. Reduce the heat and let the stew simmer covered for 20 minutes until the chicken is cooked through.
  9. 9. Remove the thyme. Season the stew with salt and pepper. Serve hot.
