  1. 1. Preheat the oven to 220 degrees Celsius and line a baking tray with baking paper.
  2. 2. Wash the potatoes and cut them into coarse sticks.
  3. 3. Mix the potato sticks with oil, salt and pepper and spread them on the tray.
  4. 4. Cut the onions into rings.
  5. 5. Bake the potatoes for 20 minutes until crispy.
  6. 6. Meanwhile, mix mayonnaise, ketchup, salt and pepper in a small bowl.
  7. 7. Beat the eggs in a bowl and fry them in a non-stick pan as an omelette.
  8. 8. Cut the omelette into strips.
  9. 9. Serve the fries with onion rings, omelette strips and the sauce.
