1. Take the octopus out of the package and let it thaw completely. Then rinse it thoroughly under running water. Cut the meat into small, bite-sized pieces.
2. Place the octopus in a pot with about 1/8 liter of water. Simmer it over low heat with the lid on for 1.5 to 2 hours. The cooking time depends on the size of the pieces. The octopus is done when it can be easily pierced with a fork.
3. Mix olive oil, lemon juice, and a pinch each of salt and oregano to create a marinade. Stir in the drained octopus and let it marinate covered for a few hours to allow the flavors to develop.
