  2. 2. Drain and transfer to a bowl.
  3. 3. Crush the garlic and add it with some olive oil to the plantains.
  4. 4. Mash the mixture well, adding chicken broth and pork cracklings as you continue to mash.
  5. 5. Season with salt and form into small portions.
  6. 6. Serve and garnish with chicken gravy if desired.
