🥧 Mini Spinach Tortilla Muffins

Ingredients
- 200 g Leaf spinach (fresh)
- 6 Stk Eggs (Size M)
- 1 Stk Small onion
- 50 g Feta cheese (crumbled)
- 1 EL Olive oil
- 1/2 TL Salt
- 1/4 TL Pepper
Instructions
- 1. Preheat the oven to 180 degrees Celsius and lightly grease a 6-cup muffin tin.
- 2. Finely dice the onion and sauté it in a pot in the olive oil until translucent.
- 3. Add the spinach and let it wilt while stirring until the water has evaporated.
- 4. Whisk the eggs in a large bowl, mix in salt and pepper, and stir in the spinach and feta.
- 5. Fill the muffin tin with the mixture and bake the tortillas for 20 minutes until golden brown and firm.
- 6. Let the muffins cool for 5 minutes in the pan before carefully removing them.
