  2. 2. Finely dice the onion and sauté it in a pot in the olive oil until translucent.
  3. 3. Add the spinach and let it wilt while stirring until the water has evaporated.
  4. 4. Whisk the eggs in a large bowl, mix in salt and pepper, and stir in the spinach and feta.
  5. 5. Fill the muffin tin with the mixture and bake the tortillas for 20 minutes until golden brown and firm.
  6. 6. Let the muffins cool for 5 minutes in the pan before carefully removing them.
