🍛 Mild Vegetable Curry with Rice

Ingredients
- 100 g carrots
- 100 g zucchini
- 1 red bell pepper
- 200 ml coconut milk
- 1 EL curry paste
- 150 g basmati rice
Instructions
- 1. Cook rice according to package instructions.
- 2. Chop the vegetables into small pieces.
- 3. Heat oil in a pan and sauté the curry paste.
- 4. Add the chopped vegetables and sauté briefly.
- 5. Add coconut milk and simmer for 10 minutes.
- 6. Serve with the cooked rice.
