🥗 Mediterranean Quinoa Salad with Chickpeas

Ingredients
- 150 g quinoa
- 200 g canned chickpeas
- 150 g cherry tomatoes
- 1 cucumber
- 1 red onion
- 3 EL olive oil
- 2 EL lemon juice
- eine Handvoll parsley
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Rinse quinoa in a sieve and boil with 400 ml of water.
- 2. Reduce heat, cover and simmer for 15 minutes.
- 3. In a large bowl, mix chickpeas, diced cucumber, halved cherry tomatoes, and chopped onion.
- 4. Add the cooked quinoa and mix well.
- 5. Add olive oil, lemon juice, salt, and pepper, and stir.
- 6. Garnish with fresh parsley and serve.
