  1. 1. Rinse quinoa in a sieve and boil with 400 ml of water.
  2. 2. Reduce heat, cover and simmer for 15 minutes.
  3. 3. In a large bowl, mix chickpeas, diced cucumber, halved cherry tomatoes, and chopped onion.
  4. 4. Add the cooked quinoa and mix well.
  5. 5. Add olive oil, lemon juice, salt, and pepper, and stir.
  6. 6. Garnish with fresh parsley and serve.
