🥗 Mediterranean Chickpea Salad

Ingredients
- 400 g chickpeas
- 2 Stück tomatoes
- 1 Stück cucumber
- 1 Stück red onion
- 3 EL olive oil
- 2 EL lemon juice
- eine Handvoll fresh parsley
- 1 Prise salt and pepper
Instructions
- 1. Rinse the chickpeas and let them drain well.
- 2. Dice the tomatoes, cucumber, and onion into small cubes.
- 3. Combine the vegetables with the chickpeas in a bowl.
- 4. Add olive oil, lemon juice, salt, and pepper.
- 5. Chop the parsley and add it.
- 6. Mix well and serve.
