🍲 Mediterranean Vegetable Stew

Ingredients
- 1 eggplant
- 1 zucchini
- 1 bell pepper
- 2 carrots
- 400 g canned tomatoes
- 500 ml vegetable broth
- 1 onion
- 2 EL olive oil
- 1 EL dried herbs
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Cube vegetables (eggplant, zucchini, bell pepper, carrots).
- 2. Chop onion and sauté in a large pot with olive oil.
- 3. Add vegetables and sauté for 5 minutes.
- 4. Add tomatoes and vegetable broth, season with spices.
- 5. Bring to a boil and simmer for 25 minutes.
- 6. Season with salt and pepper.
- 7. Serve stew or let cool and store for meal prep.
