  1. 1. Cut eggplant in half and wrap with garlic in aluminum foil.
  2. 2. Bake in the oven at 200°C for 30 minutes until soft.
  3. 3. After cooling, scoop out the eggplant flesh into a bowl.
  4. 4. Remove garlic cloves from foil and chop finely.
  5. 5. Add tahini, lemon juice, olive oil, paprika, salt, and pepper.
  6. 6. Mix everything well and garnish with fresh parsley.
  7. 7. Serve with bread or vegetables.
