🍳 Mediterranean Eggplant Dip

Ingredients
- 1 groß Eggplant
- 2 Garlic Cloves
- 2 EL Tahini
- 2 EL Lemon Juice
- 3 EL Olive Oil
- 1 TL Paprika Powder
- 1 TL Salt
- 0.5 TL Pepper
- 1 Handvoll Fresh Parsley
Instructions
- 1. Cut eggplant in half and wrap with garlic in aluminum foil.
- 2. Bake in the oven at 200°C for 30 minutes until soft.
- 3. After cooling, scoop out the eggplant flesh into a bowl.
- 4. Remove garlic cloves from foil and chop finely.
- 5. Add tahini, lemon juice, olive oil, paprika, salt, and pepper.
- 6. Mix everything well and garnish with fresh parsley.
- 7. Serve with bread or vegetables.
