🍽️ Mediterranean Vegetable Balls in the Air Fryer

Ingredients
- 200g Zucchini
- 1 Red Bell Pepper
- 1 Onion
- 2 Garlic Clove
- 100g Feta Cheese
- 50g Panko Breadcrumbs
- 2 EL Olive Oil
- 1 TL Salt
- 1 TL Pepper
- 1 TL Oregano
Instructions
- 1. Wash the zucchini, the red pepper, and the onion under running water.
- 2. Thoroughly dry all the vegetables with a clean kitchen towel.
- 3. Cut the zucchini into small, approximately 1 cm cubes.
- 4. Remove the core and seeds from the red pepper.
- 5. Cut the seeded pepper into small, 1 cm cubes as well.
- 6. Dice the onion finely.
- 7. Peel the 2 garlic cloves and chop them very finely.
- 8. Crumble the feta cheese into small pieces with your fingers.
- 9. Put the chopped vegetables, the feta, the panko breadcrumbs, and the garlic into a large bowl.
- 10. Add the 2 tablespoons olive oil, the salt, the pepper, and the oregano.
- 11. Mix everything together firmly with your hands until you have a shapeable dough.
- 12. Form 8 equal-sized balls from the dough and place them in the basket.
- 13. Preheat the air fryer to 180 °C until the signal sounds.
- 14. Cook the balls at 180 °C for approximately 15 minutes, until they are golden brown and crispy.
- 15. Carefully remove the balls and let them rest for 2 minutes.
- 16. Serve the warm balls immediately – they will hold their shape and have an intense aroma.
