🍤 Mediterranean Shrimp Salad with Lemon Dressing

Ingredients
- 400 g Shrimp (peeled, deveined)
- 150 g Cucumber
- 50 g Onion (red)
- 30 ml Olive oil
- 1 Stk Lemon
- 3 g Salt
- 1 g Black pepper
- 10 g Fresh parsley
Instructions
- 1. Wash the cucumber and halve it lengthwise. Remove the seeds with a spoon and dice the remaining flesh into small cubes.
- 2. Dice the red onion into very fine cubes and place them in a bowl of cold water for 5 minutes to mellow the sharpness.
- 3. Pan-fry the shrimp in a pan over medium heat in a little olive oil until pink and cooked through (approx. 2-3 minutes per side).
- 4. Add the drained onions, cucumber cubes, and shrimp to a large bowl.
- 5. Mix the oil with the lemon juice, salt, and pepper.
- 6. Pour the dressing over the salad and stir in the finely chopped parsley. Serve immediately.
