  1. 1. Wash the cucumber and halve it lengthwise. Remove the seeds with a spoon and dice the remaining flesh into small cubes.
  2. 2. Dice the red onion into very fine cubes and place them in a bowl of cold water for 5 minutes to mellow the sharpness.
  3. 3. Pan-fry the shrimp in a pan over medium heat in a little olive oil until pink and cooked through (approx. 2-3 minutes per side).
  4. 4. Add the drained onions, cucumber cubes, and shrimp to a large bowl.
  5. 5. Mix the oil with the lemon juice, salt, and pepper.
  6. 6. Pour the dressing over the salad and stir in the finely chopped parsley. Serve immediately.
