- 200g Salmon fillets
- 2 EL Lemon juice
- 1 EL Capers
- 2 EL Olive oil
- 1 Garlic clove
- 1 TL Salt
- 1 TL Pepper

- 1. Preheat the air fryer to 180 °C. This takes about 3 minutes and ensures crispy salmon.
- 2. Pat the 200 g salmon fillets dry with paper towels. Never wash them, or they’ll become mushy.
- 3. Rub 1 tsp salt evenly over both sides of the fillets. This seasons the meat from the inside.
- 4. Grind 1 tsp pepper fresh over the seasoned fillets. Spread the grains evenly.
- 5. Rinse 1 tbsp capers under cold water. This removes the brining salt flavour.
- 6. Pat the capers completely dry in a sieve. Water in the dressing prevents it from binding.
- 7. Peel 1 garlic clove and chop it very finely. A knife helps with peeling.
- 8. Pour 2 tbsp lemon juice into a small bowl. This is the base for your dressing.
- 9. Add 2 tbsp olive oil to the lemon juice. The oil balances the tart flavour.
- 10. Add the dried capers and chopped garlic to the oil-lemon mixture. Everything together.
- 11. Stir the dressing vigorously with a fork. It should combine into a creamy emulsion.
- 12. Place the salmon fillets in the basket of the air fryer. Make sure they don’t touch.
- 13. Cook the salmon at 180 °C for about 10 minutes, until it flakes easily with a fork.
- 14. Carefully remove the salmon from the air fryer. Place it on plates to avoid crushing it.
- 15. Drizzle the finished lemon-caper dressing directly over the warm salmon. Serve immediately.
