  1. 1. Wash the potatoes and carrots. Boil them in salted water until tender (approx. 15 minutes). Drain and let them cool.
  2. 2. Cut the cooled potatoes and carrots into very small cubes. Wash and dry the chickpeas well.
  3. 3. Roughly chop the anchovies. In a bowl, mix the mayonnaise, sour cream, lemon juice, and anchovies.
  4. 4. Fold in the potatoes, carrots, peas, and chickpeas into the sauce. Season with salt and pepper.
  5. 5. Fill the mixture into small piping bags and pipe onto tortilla chips. Serve immediately.
