🥔 Mediterranean Rusian Bites

Ingredients
- 400 g Potatoes
- 100 g Carrots
- 80 ml Mayonnaise
- 40 ml Sour Cream
- 80 g Pickled Anchovy Fillets
- 100 g Peas (cooked)
- 200 g Chickpeas (canned)
- 1 EL Lemon Juice
Instructions
- 1. Wash the potatoes and carrots. Boil them in salted water until tender (approx. 15 minutes). Drain and let them cool.
- 2. Cut the cooled potatoes and carrots into very small cubes. Wash and dry the chickpeas well.
- 3. Roughly chop the anchovies. In a bowl, mix the mayonnaise, sour cream, lemon juice, and anchovies.
- 4. Fold in the potatoes, carrots, peas, and chickpeas into the sauce. Season with salt and pepper.
- 5. Fill the mixture into small piping bags and pipe onto tortilla chips. Serve immediately.
