Ingredients
- 150g Green Lentils
- 100g Cherry Tomatoes
- 100g Zucchini
- 100g Eggplant
- 1 Bund Basil
- 2 EL Olive Oil
- 1 Zehe Garlic
- 1 EL Balsamic Vinegar
Instructions
- 1. Cook lentils according to instructions.
- 2. Dice zucchini and eggplant and sauté.
- 3. Halve cherry tomatoes and add them.
- 4. Finely chop garlic.
- 5. Combine all ingredients in a bowl.
- 6. Season with olive oil and balsamic vinegar.
