🍽️ Mediterranean Lamb Chops with Herb Quinoa

Ingredients
- 400 g Lamb Chops
- 100 g Quinoa
- 1 Onion
- 2 Zehen Garlic
- 200 g Brussels Sprouts
- 2 EL Olive Oil
- 1 EL Thyme
- 1 EL Oregano
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Preheat the air fryer to 180 °C. This takes about 3 minutes.
- 2. Pat the 400 g lamb chops dry with paper towels. Never wash them, or they’ll become mushy.
- 3. Rub the chops with 1 tsp salt, 1 tsp pepper, 1 tbsp thyme, and 1 tbsp oregano.
- 4. Wash the 100 g quinoa in a sieve under cold water. Remove any bitter substances.
- 5. Put the quinoa in a pot and pour 200 ml water over it. Cover it.
- 6. Place the seasoned chops in the air fryer basket. Make sure they don't touch.
- 7. Cook the chops at 180 °C for 12 minutes, until golden brown. Flip them after 6 minutes for even browning.
- 8. Peel the 1 onion and dice it finely. Also finely chop the 2 garlic cloves.
- 9. Wash the Brussels sprouts and halve them lengthwise. Remove any wilted outer leaves if needed.
- 10. Put the Brussels sprouts in a small, oven-safe dish. Drizzle with 1 tbsp olive oil.
- 11. Place the Brussels sprouts in the air fryer and cook them at 180 °C for 8 minutes.
- 12. Take the chops out and let them rest on a plate for 5 minutes. This keeps the juices inside.
- 13. Drain the cooking water from the quinoa as soon as it’s absorbed. Cover and let it steam for 10 minutes.
- 14. Sauté the onion and garlic in the remaining 1 tbsp olive oil in a pan until fragrant.
- 15. Mix the cooked quinoa with the onion-garlic mixture. Season with salt and pepper.
- 16. Arrange the chops, the herb quinoa, and the Brussels sprouts on plates. It’s perfect when the meat is pink and the Brussels sprouts are crisp.
