🥗 Mediterranean Chickpea Quinoa Bowl

Ingredients
- 200 g Quinoa
- 400 g Chickpeas (canned)
- 250 g Zucchini
- 200 g Cherry tomatoes
- 150 g Feta cheese
- 30 ml Olive oil
- 15 ml Balsamic vinegar
- 5 g Dried basil
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Rinse the quinoa under cold water. Cook it in salted water according to package instructions (approx. 15 minutes).
- 2. Wash the zucchini and cut it into small cubes. Wash the tomatoes and cut them in half.
- 3. Heat 15 ml of olive oil in a large pan. Fry the zucchini cubes until golden brown (approx. 5 minutes).
- 4. Remove the zucchini from the pan. Add the chickpeas to the pan and fry for 3 minutes until slightly crispy.
- 5. Mix the cooked quinoa, zucchini, and chickpeas in a large bowl.
- 6. Mix the remaining olive oil, balsamic vinegar, basil, salt, and pepper in a small bowl to make the dressing.
- 7. Pour the dressing over the bowl and mix everything well. Crumble the feta cheese on top.
- 8. Add the halved cherry tomatoes at the end and serve the bowl immediately.
