🥙 Mediterranean Chickpea Bowls

Ingredients
- 240 g chickpeas (canned, drained)
- 200 g cherry tomatoes
- 1 Stk (mittel) cucumber
- 1 Stk (klein) red onion
- 2 EL olive oil
- 1 EL lemon juice (freshly squeezed)
- 1/2 TL dried oregano
- 80 g feta (crumbled)
- 2 EL parsley (chopped)
Instructions
- 1. Rinse the chickpeas under cold water and pat them dry thoroughly.
- 2. Cut the tomatoes in half, the cucumber into small cubes, and the red onion into thin strips.
- 3. Combine the chickpeas, tomatoes, cucumber, and onion in a large bowl.
- 4. Whisk the olive oil, lemon juice, oregano, salt, and pepper to make a dressing. Pour it over the salad.
- 5. Crumble the feta over the salad and garnish everything with fresh parsley.
- 6. Serve the bowls immediately on plates.
