  1. 1. Rinse the chickpeas in a sieve under cold water and pat them dry.
  2. 2. Wash the cucumber and the bell pepper. Cut both into small cubes.
  3. 3. Wash the cherry tomatoes and cut them in half.
  4. 4. Crumble the feta cheese into coarse pieces with your hands.
  5. 5. Wash the mint and pick off the leaves.
  6. 6. Squeeze the juice of half the lemon into the olive oil in a small bowl and whisk it with salt and pepper.
  7. 7. Combine all ingredients in a large bowl and toss them gently with the dressing.
  8. 8. Divide the bowl into four containers for the meal prep.
