🥙 Mediterranean Chickpea Bowl with Lemon and Mint

Ingredients
- 400 g Chickpeas (canned, drained)
- 150 g Feta cheese
- 1 Stk Cucumber
- 250 g Cherry tomatoes
- 1 Stk Red bell pepper
- 30 ml Olive oil
- 1 Stk Lemon
- 10 g Fresh mint
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Rinse the chickpeas in a sieve under cold water and pat them dry.
- 2. Wash the cucumber and the bell pepper. Cut both into small cubes.
- 3. Wash the cherry tomatoes and cut them in half.
- 4. Crumble the feta cheese into coarse pieces with your hands.
- 5. Wash the mint and pick off the leaves.
- 6. Squeeze the juice of half the lemon into the olive oil in a small bowl and whisk it with salt and pepper.
- 7. Combine all ingredients in a large bowl and toss them gently with the dressing.
- 8. Divide the bowl into four containers for the meal prep.
