🥗 Mediterranean Chicken Bowl with Quinoa and Lemon

Ingredients
- 400 g Chicken breast fillet
- 200 g quinoa
- 400 g Chickpeas (can)
- 200 g zucchini
- 100 g Feta cheese
- 30 ml Olive oil
- 1 Stk Lemon
- 10 g Paprika powder (sweet)
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Rinse the quinoa under cold water and cook it in salted water according to package instructions. Stir occasionally.
- 2. Cut the chicken breast fillet into equal-sized cubes. Season with paprika powder, salt, and pepper.
- 3. Wash the zucchini and cut it into small cubes. Drain the chickpeas and rinse them.
- 4. Heat half of the olive oil in a large pan. Fry the chicken until golden brown over medium heat (approx. 6-8 minutes). Remove it from the pan.
- 5. Fry the zucchini cubes in the same oil until soft (approx. 5 minutes). Add the chickpeas and heat them briefly.
- 6. Crumble the feta cheese with your hands. Squeeze the juice of the lemon over the vegetables.
- 7. Divide the quinoa into four bowls. Add the chicken, vegetables, and feta on top. Drizzle the remaining olive oil over it.
