🍗 Mediterranean Chicken Bowl with Spinach and Lemon

Ingredients
- 400 g Chicken breast fillet
- 240 g (Abtropfgewicht) Chickpeas (can)
- 150 g Fresh spinach
- 200 g Brown rice (precooked)
- 1 Stk. Lemon
- 2 EL Olive oil
- 2 Zehen Garlic
- 1 TL Paprika powder (sweet)
- 1 Prise Salt and pepper
Instructions
- 1. Rinse the rice under cold water and heat it in a pot according to package instructions.
- 2. Cut the chicken breast fillet into bite-sized cubes and season them with paprika powder, salt, and pepper.
- 3. Heat the olive oil in a pan over medium heat and fry the chicken cubes for about 6 minutes until golden brown.
- 4. Press the garlic cloves through a press and add them to the pan. Cook for another 1 minute.
- 5. Drain the chickpeas and add them to the pan. Mix everything well and heat for 2 minutes.
- 6. Remove the pan from the heat and stir in the fresh spinach until it wilts.
- 7. Squeeze the juice of half the lemon over the mixture.
- 8. Divide the rice into 4 bowls. Top with the chicken spinach mixture. Serve with the remaining lemon wedge.
