  1. 1. Preheat the air fryer to 200 °C. This takes about 3 minutes and ensures a crispy result.
  2. 2. Pat the 200 g calamari rings dry with paper towels. Never wash them, or they’ll become soggy.
  3. 3. Season the dry rings with 1 teaspoon salt and 1 teaspoon pepper. Mix everything well in the bowl.
  4. 4. Crack 1 egg into a separate, shallow bowl. Use a fork to lightly beat it.
  5. 5. Stir 1 tablespoon lemon juice into the beaten egg. This makes the breading smoother.
  6. 6. Pour the 100 g panko breadcrumbs into a third bowl. Panko makes the coating extra crispy.
  7. 7. Dip the calamari rings one by one first in the egg, then in the panko. Press the breading on firmly.
  8. 8. Finely chop 1 garlic clove. Make sure the pieces are small for the oil.
  9. 9. Heat 2 tablespoons olive oil in a small pan over medium heat. The oil should be warm, not smoking.
  10. 10. Fry the finely chopped garlic in the oil for 1 minute, until fragrant. Don't let it brown, or it will become bitter.
  11. 11. Remove the garlic with a spoon. The flavored oil stays in the pan for later.
  12. 12. Place the breaded calamari rings in the basket of the air fryer. Lay them side by side, don't stack them.
  13. 13. Cook the calamari at 200 °C for about 10 minutes, until golden brown and crispy. Turn them after 5 minutes.
  14. 14. Remove the calamari from the air fryer. Drizzle them immediately with the warm garlic oil.
  15. 15. Sprinkle 1 teaspoon paprika over the hot calamari. This adds color and a mild flavor.
  16. 16. Serve the calamari immediately. They are perfect when the breading cracks when you bite into them.
