🍽️ Mediterranean Aubergine-Chickpea Balls from the Air Fryer

Ingredients
- 1 Eggplants
- 200g Chickpeas
- 1 Onion
- 2 Garlic cloves
- 1 TL Paprika powder
- 1 Bund Cilantro
- 2 EL Olive oil
Instructions
- 1. Cut the eggplant into large cubes and place them in a bowl.
- 2. Lightly salt the eggplant cubes and let them sit for 10 minutes to release their water.
- 3. Firmly squeeze the eggplant in a kitchen towel to remove the water.
- 4. Open the can of chickpeas and drain the water.
- 5. Roughly mash the chickpeas with a fork to create a sticky paste.
- 6. Finely chop the onion and the 2 garlic cloves.
- 7. Wash the coriander and finely chop the leaves.
- 8. Combine the eggplant, chickpeas, onion, garlic, coriander, and paprika in a large bowl.
- 9. Preheat the air fryer to 180 °C until it beeps.
- 10. Knead the 2 tablespoons of olive oil into the mixture until it holds together well.
- 11. Form the mixture into 8 equal-sized balls, about 3 cm in diameter.
- 12. Place the balls in the air fryer basket, making sure they don’t touch.
- 13. Cook the balls at 180 °C for approximately 15 minutes, flipping them halfway through, until they are golden brown.
- 14. Fry the balls for another 5 minutes, until they are golden brown and firm.
- 15. Let the balls rest in the basket for 3 minutes to firm up.
- 16. Arrange the balls on a plate and check: they should be crispy on the outside.
