  1. 1. Rinse quinoa thoroughly and cook according to package instructions.
  2. 2. Drain chickpeas and combine in a bowl with olive oil, lemon juice, salt, and pepper.
  3. 3. Chop cucumber, tomatoes, and onion and add to the chickpea mixture.
  4. 4. Chop parsley and add as well.
  5. 5. Serve cooked quinoa in bowls and top with the vegetable mixture.
  6. 6. Crumble feta cheese over the bowl.
  7. 7. Drizzle with olive oil and enjoy.
