🥗 Mediterranean Quinoa Bowl with Chickpeas

Ingredients
- 150 g Quinoa
- 200 g Chickpeas
- 1 Cucumber
- 200 g Tomatoes
- 1 Red Onion
- 100 g Feta Cheese
- 3 EL Olive Oil
- 2 EL Lemon Juice
- 1 Handvoll Parsley
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Rinse quinoa thoroughly and cook according to package instructions.
- 2. Drain chickpeas and combine in a bowl with olive oil, lemon juice, salt, and pepper.
- 3. Chop cucumber, tomatoes, and onion and add to the chickpea mixture.
- 4. Chop parsley and add as well.
- 5. Serve cooked quinoa in bowls and top with the vegetable mixture.
- 6. Crumble feta cheese over the bowl.
- 7. Drizzle with olive oil and enjoy.
